Vegan Van Targets Oct. 17 for Restaurant Near East Colfax

Vegan Van is targeting October 17 to start serving breakfast, lunch and dinner at 1490 Eudora St., near East Colfax Avenue, according to a September 30 BusinessDen report citing general manager Hannah Lagaly. The reported move would give Colfax-area customers a restaurant destination for the plant-based comfort-food business. For customers who currently collect orders in Northeast Park Hill, it would mean a new place to visit.

For now, Vegan Van’s website lists 5155 E. 39th Ave. and describes its food as to-go. Its About page says the former food truck already has a permanent pickup location. The ordering page offers pickup and delivery through that location and lists a plant-based Crunchwrap, breakfast items and tacos. Eudora would be a change from an existing fixed location, rather than the business’s first permanent address.

October 17 is a target, not an opening confirmation. The Fifth String’s public About page still lists 1490 Eudora as “coming soon,” though that undated listing does not establish who occupies the address today. Customers ordering now are still directed to Vegan Van’s East 39th Avenue location; they should check the business’s updated directions before making a trip to Eudora.
